Instead: heirloom ingredients from regenerative farming, refined through classical techniques – cooked, roasted, fermented. Nothing new – only the forgotten, rediscovered.
With passion, we explore the Swiss landscape – its flora and fauna – transforming its abundance into surprising, delightful culinary experiences. Everything comes from meaningful, local farming by Zurich-based producers who share our values.
